Kashmiri Lamb – Rogan Josh


Exotic, delicious, Indian dish with just enough spice to keep it interesting:

Kashmiri Lamb – Rogan Josh

Ingredients

  • 5 cloves garlic roughly chopped
  • 1 0nion roughly chopped
  • 1 inch piece ginger root, peeled and roughly chopped
  • 1 tsp ground cinnamon
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp paprika
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tbsp tomato paste
  • 1/2 cup vegetable oil
  • 2 lb lamb, cut into 1 inch chunks
  • 10 cardamon pods, slightly crushed
  • 1 1/4 cups water

Directions

  1. Put the garlic, onion, ginger root, ground spices, salt, tomato paste into a blender and pulse until smooth.
  2. Heat the oil in a flameproof casserole dish, add the lamb and cardamon pods. Fry over high heat to brown the meat on all sides.
  3. Add the blended paste and cook for 5 minutes stirring frequently. Pour in the water and simmer, covered for 1 1/2 hours or until the meat is tender.
  4. Serve over rice with some warmed naan bread.

Indian Style Rice

Ingredients

  • 2 cups long-grain rice
  • 8 cups water
  • 2 tsp salt
  • 2 cloves
  • 2 cardamom pods
  • One 2-inch piece of cinnamon
  • 3 tbsp vegetable oil
  • 1/2 tsp dark mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp chile flakes
  • 1 medium onion, chopped
  • 3 chopped garlic cloves
  • 1/4 tsp turmeric

Directions

  1. Place rice in a sieve and run cool water through it to rinse it until the water runs clear. Soak the rice in cool water for 30 minutes. Drain.
  2. Bring 8 cups of water and the salt to a boil in a large pot. Add the rice and stir. Add the cloves, cardamom and cinnamon and simmer for 10 minutes. Taste the rice, and test if it is done to your taste; rice can take more or less time to cook depending on how old it is. If still too firm, cook a few minutes longer
  3. When the rice is cooked to your liking, drain the rice into a colander and rinse with cold water to stop if from cooking. Remove the cloves, cardamom and cinnamon and discard. Set the rice aside to drain.
  4. In a pan large enough to hold the rice, heat the oil over medium-high heat. Add the mustard and cumin seeds and the chile flakes. Cook until the mustard seeds start popping, then add the onion. Sauté until the onion begins to brown, about 5-7 minutes.
  5. Add the garlic and sauté another 2-3 minutes. Add the rice and mix well. Sprinkle the turmeric over the rice and mix well. Cook for another 3-4 minutes, stirring often.

Spicy Aromatic Chicken


Some dishes not only taste great, not only smell great, they are also easy to prepare. What could be better than combine all three for a summer meal when you want to stay away from the kitchen heat as much as possible?

I found the following recipe in The Big Book of One Pot:

Spicy Aromatic Chicken

Serves 4

Ingredients

  • 4-8 chicken pieces skinned
  • 1/2 lemon, cut into wedges
  • 4 tablespoons olive oil
  • 1 onion, coarsley chopped
  • 2 large garlic cloves, finely chopped
  • 1/2 cup dry white wine
  • 14 ounces canned chopped tomatoes in juice
  • pinch of sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon  ground cloves
  • 1/2 teaspoon ground allspice
  • 14 ounces canned artichoke hearts, drained
  • 8 black olives, pitted
  • salt and pepper, to taste

Directions

  1. Rub the chicken pieces with the lemon. Heat the oil in a large, flameproof casserole or lidded skillet. Add the onion and garlic and cook for 5 minutes, until softened. Add the chicken pieces and cook for 5-10 minutes until browned on all sides.
  2. Pour in the wine and add the tomatoes with their juice, along with the sugar, cinnamon, cloves, allspice, salt and pepper and bring to a boil. Cover the the casserole and simmer for 45 minutes to 1 hour, until the chicken is tender.
  3. Meanwhile,cut the artichoke hearts in half. Add the artichokes and the olives to the casserole about 10 minutes before the end of cooking, and continue to simmer until heated through. Serve hot.

Your kitchen will be filled with an inviting aroma, your palate will enjoy it. What more could you ask?

Boeuf Bourguignon – “One of the Most Delicious Beef Dishes…”


Originating among France’s Burgundy peasantry, this dish was elevated to the status of haute cuisine by none other than the King of Chefs and the Chef of Kings (as the French press and Kaiser Wilhelm II referred to him) – Auguste EscoffierJulia Child in her Mastering the Art of French Cooking, refers to Boeuf Bourguignon as ”certainly one of the most delicious beef dishes concocted by man.”

While looking for a kosher version that might do justice to Ms. Child’s praises, I came across this scrumptious recipe in Lévana Kirschenbaum‘s latest book, The Whole Foods Kosher Kitchen, page 164:

Boeuf Bourguignon

Spend a wonderful evening with a few French classics and some wine to go with dinner! By the way, my bourguignon has been included in Joan Schwartz’s charming book, deceptively innocent, called Meat and Potatoes. My secret ingredient is crème de cassis, the wonderful black currant liqueur.

This dish reheats very well and improves with age, so go ahead and make it a day or two ahead.

  • 4 pounds beef or bison shoulder, cut into 2 inch cubes for stew
  • 6 cups water
  • 3 tablespoons extra-virgin olive oil
  • 6 cloves garlic, peeled
  • 2 cups dry wine
  • 1/4 cup crème de cassis
  • 2 large tomatoes, diced small
  • 1 tablespoon coarsely ground black pepper
  • 6 bay leaves, or 1 teaspoon ground
  • 4 sprigs fresh thyme, leaves only(or throw in the sprigs in whole, but don’t forget to discard them at the end of cooking)
  •  2 pounds very thin long carrots, peeled (about 20)
  • 20 very small organic potatoes, scrubbed (only organic potatoes are safe with skins on)
  • 2 dozen tiny onions, peeled and left whole (frozen OK: they are already peeled)
On a stove top: Place beef, water, and oil in a heavy, wide-bottom pot. Bring to a boil. Reduce to medium and cook covered for 2 hours. Add the garlic, wine, creme de cassis, tomatoes, pepper, and bay leaves and cook for 30 more minutes. Add thyme, carrots, potatoes, and onions and cook for 30 minutes. The meat should be fork tender, Transfer meat and all vegetables on platter with a slotted spoon. If the liquid left in the pot is too thin, reduce it on a high flame until it is thickened, the consistency of maple syrup. Pour the reduced liquid over the whole dish and serve hot. Will make 8 to 10 servings.
With a Crock-Pot: Layer all the ingredients except the water (no water) in a 6-quart Crock-Pot, in the order they were given. Set the Crock-Pot on low in the morning. It will be ready for dinner (10 to 12 hours total cooking time).
Variation: Try the dish using dark stout beer instead of wine, as my daughter in law Ruthie does.
As you taste this you’ll certainly agree with Julia Child’s assessment. So… enjoy, gentle reader, enjoy!

Aromas of Aleppo


Poopa Dweck‘s magnum opus is far more than just an ethnic cookbook. In its pages, the author lovingly brings us the history, the culture, the flavors and aromas of over 2500 years of Syrian Jewry.

As the author tells us in the Preface, the book…

…features dishes that are both disarmingly familiar, exotic, and, above all, healthful.

My community represents a link to a forgotten past. It is one of the few Jewish communities to live through the rise and fall of Moorish Spain and the Ottoman Empire and survive as a modern people in the West while maintaining its venerable traditions. Our soulful culture, with its fervid, tuneful songs and communal celebratory feasts, is at its most vibrant during the Sabbath, holidays, and life cycle events. One of the most artful representations of Aleppian Jewish culture is our food, whose story I have yearned to tell.

By coincidence (is there really such a thing?!?) I was playing Rabbi Moshe Tessone‘s CD Odeh La’El!, as I became engrossed in this coffee table sized, art-book quality tome. The writing is informative and fun, the evocative photography (the colors, the settings, the lighting, the angles, bespeak of a certain rusticity and a sedate elegance at the same time) and the recipes truly introduced me to a world which – as an Ashkenazic Jew – I barely knew. Between this beautiful book and the music I felt transported to another time, to an enchanted region, far from the hustle and bustle of New York and – at least for the moment – life seemed beautiful, simple and far more pure…

Looking through the old photographs, looking at the author’s family, looking at the recipes pictured, almost made me feel as if I was partaking of a holiday meal at her table.

While loeafing though the book I just had to immediately try a recipe. On page 162 I found one that called for some of my leftover matzah meal and tamarind concentrate, which I’d picked up in the nearby Sephardic neighborhood in Brooklyn.

Keftes

Tamarind-Stewed Meatballs

Meatball dishes such as keftes are a tradition all over the Middle East. Some regions use turmeric and others use sumac or lemon and mintas flavoring accents for similar meatballs. Aleppian Jews like to use a combination of tomato sauce and tamarind, the proportions of which can vary according to a family’s preference.

Meatballs:

  • 1 pound ground beef
  • 3 eggs
  • 3 tablespoons matzah meal
  • 1 tablespoon Aleppo pepper or 1/2 teaspoon crushed red pepper
Sauce:
  • One 6 ounce can tomato paste, or two 8 ounce cans tomato paste
  • 1 tablespoon ou (tamarind concentrate, page 41), homemade or store bought
  • Juice of 1 lemon (about 3 tablespoons)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon sugar (optional)
  • 2 tablespoon vegetable oil
  1. To make the meatballs, combine the the beef, eggs, matzah meal, salt and Aleppo pepper. Mix well by hand. The mixture should be loose and moist so that it can best absorb the sauce and retain a velvety texture. Shape the meat mixture into walnut-size balls.
  2. To make the sauce, combine the tomato paste, ou, lemon juice, salt, 1 cup of water, and, if desired, sugar, mix well.
  3. In a large ovenproof saucepan, brown the meatballs, one batch at a time, in the oil over medium-high heat for about 3 minutes per batch.
  4. Return all the meatballs to the saucepan. Pour the sauce over the meatballs and bring to a boil. Reduce the heat to low and simmer, covered, for 30 minutes to thicken sauce and allow the flavors to integrate thoroughly.

Variation

For a tangier sauce, increase the ou by 1 1/2 teaspoons and increase the water by 1/2 cup. Or omit the ou altogether for a lighter, more refreshing sauce, especially if you are serving another dish with ou.

Yield: 8 to 10 servings

This Evening’s Two Hour Internet Radio Show And a Recipe…


Last Wednesday’s live broadcast from Gotham Wines and Liquors‘ 8th Annual Wine Extravaganza, held at the West End Institutional Synagogue. We had some great guests on that show and made new friends. Unfortunately the .mp3 file got trashed, so we never got a chance to hear it the actual broadcast. Tonight’s show will focus on wine and food. Our guests will be several kosher winery spokesmen and distributors, then at the last half hour we will talk to Chef Jeff Nathan, Chef/owner of Abigael’s on Broadway.

We will discuss the reasons for the 4 cups of wine and other Pessach customs, we will hear about their selections from the various wineries, while Chef Jeff will explain the whole concept of the New Jewish Cuisine, which he made into a wildly successful series on Public Television. We will also talk about his journey to become a successful restaurateur and what Abigael’s is planning for Passover.

The first cookbook Jeff Nathan published – in 2002 –  Adventures in Jewish Cooking, included some great recipes that can be made on Passover. Here is one I intend to savor on the last day of Pessach, when I finally do eat gebroks. It will go perfectly with a glass of  Psagot Cabernet Sauvignon 2009

Veal Chops Milanese with Tomato Salad and Arugula

In Milan, you’ll find golden-crusted veal chops so big they fill your plate. Before being cooked, they are pounded while still on the bone. This creates wide flaps of meat to allow for more crispy coating that everyone loves. A combination of matzo flour, matzo meal, and matzo farfel is my secret to creating a crunchier crust than is possible with bread crumbs alone. Using matzo also opens up the possibility of enjoying this dish right through Passover week. You will need a very large, 12-14 inch skillet to cook both chops at once. Of course, if you have two such skillets, you can invite a couple of friends over for dinner, doubling the amount of tomato salad.

Ingredients

  • 1 tablespoon fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 2 ripe tomatoes, preferably 1 red and 1 yellow, seeded and cut into 1/2 inch dice
  • 1 tablespoon fresh basil, cut into thin ribbons
  • 1 1/2 teaspoons chopped fresh oregano
  • 1/4 teaspoon chopped fresh rosemary
  • Kosher salt and freshly ground black pepper to taste
  • Two twelve ounce bone-in veal chops, about 1 inch thick, trimmed of excess fat
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground pepper
  • 1/4 cup matzo flour (also called matzo cake flour)
  • 2 large eggs, beaten with 2 teaspoons water
  • 1/2 cup matzo meal
  • 1/2 cup matzo farfel
  • 1/2 cup olive oil (regular or extra-virgin)
  • 6 ounces arugula, washed and dried, torn bite-sized pieces.
  • Lemon wedges, for serving

Directions

  1. Position a rack in the center of the oven and preheat the oven to 400 F.
  2. To make the tomato salad, whisk the lemon juice and oil in a medium bowl. Add the tomatoes, basil, oregano and rosemary and toss. Season with salt and pepper. Cover and let stand at room temperature, stirring occasionally, while preparing the veal.
  3. Place the chops between sheets of plastic wrap or wax paper. Using a heavy mallet or rolling pin, pound the meaty part of each chop until it’s about 1/2 inch thick, to create chops with a thinner flasp of meat attached to the rib bone. (In Milanese restaurants, the veal is pounded even thinner and wider, but at home, practicality demands that you pound the veal to a size that will allow two chops to fit into the skillet.) Season the chops with salt and pepper.
  4. Place the matzo flour in a shallow dish, the beaten eggs in a second shallow dish and the matzo farfel in a third shallow dish, Coat each veal chop with matzoh flour, then the egg wash, and then the matzoh meal.
  5. Heat the oil in a 12-inch skillet over medium heat until hot but not smoking. Add the chops and cook, turning one, until golden brown, about 5 minutes. Place the browned chops on a large baking sheet. Bake until they feel firm when pressed in the center, 8 to 10 minutes.
  6. Just before serving, add the arugula to the tomato salad and mix. For each serving place a chop on a dinner plate and heap the tomato salad on top. Serve immediately with a wedge of lemon.

Just like his other book (which we reviewed) and has become one of my favorites, this one is also chuck full of mouth watering recipes which I can’t wait to try.

An Unusually Delicious Brisket


Growing up in Uruguay, brisket (pecho) was a staple at every major festive occasion in my parents’ home and my mother’s brisket was served at least once, usually twice, during the sedorim. Aah, my mother’s brisket filled the house with its aroma, I remember the anticipation with which I waited to have itagain and again… Over the years I tried to find different versions of this old favorite and found many succulent variations, but last night’s version served at Lévana’s cooking demo far outshines most! Here she adapted her famous brisket to Passover by changing her deservedly famous recipe. She used honey instead of the usual molasses and brandy instead of bourbon Lévana has graciously agreed to share her recipe, notice the unusual ingredients:

Brisket in Coffee Brandy Sauce

Ingredients

  • 2 large onions, sliced very thin
  • 1 brisket. 6 to 7 pounds, first cut. Rinsed and patted thoroughly dry
  • 3 tablespoons instant coffee powder, decaf OK, mixed with 2 cups warm water
  • 1/3 cup brandy
  • 1/3 cup honey
  • ¼ cup vinegar
  • ½ cup olive oil
  • 1 tablespoon ground pepper

Directions

  1. Preheat the oven to 350 degrees.
  2. Scatter the onions in a pan just large enough to fit the meat.
  3. Place the brisket on top of the onions.
  4. Combine all remaining ingredients in a bowl, and pour the mixture evenly over the meat. Cover tightly with foil, and bake 2 hours.
  5. Turn the brisket over, and bake uncovered 1 more hour.
  6. Transfer the brisket to a cutting board and wait about 10 minutes before slicing.
  7. Meanwhile strain the cooking liquids into a small sauce pan, pressing hard on the solids (and discarding them), and reduce on a high flame to about 2 ½ cups. Let the brisket cool slightly.
  8. Slice thin against the grain. In places where the brisket is very long, cut across first before slicing. Pour the gravy on top.

Roast Chicken with Citrus and Aromatics


While nice presentation might increase the appetite for a specific dish, there are certain classics that will always be welcome even without the fancy looks. As you will see from the photo, this dish could have been fancier looking, but as you read the recipe you come to realize that it is very flavorful and superbly aromatic and needs no time wasted in making look good what you know will taste good!

From the Restless Chipottle blog: (to make this recipe kosher, I just changed the butter to margarine)

Roast Chicken with Citrus and Aromatics

Ingredients

  • 1 5-6 lb whole chicken
  • 4 sprigs fresh rosemary
  • 1 orange
  • 1 lemon
  • 1 tbs culinary lavender
  • 1/2 tbs cardamom
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup unsalted margarine, softened

Directions

  1. Preheat oven to 425F.
  2. Place rack in roasting pan.
  3. Mix the cardamom, lavender, salt, pepper, and 1/4 cup margarine and shape into a ball
  4. Clean chicken thoroughly inside and out and pat dry with paper towel.
  5. Cut the orange and lemon in half and place in the cavity of the chicken.
  6. Add the rosemary sprigs and the margarine mixture.
  7. Melt the remaining margarine and rub over skin of the chicken.
  8. Salt and pepper the skin.
  9. Place in the oven for about 1 1/2 hours or until done. Bast several times by spooning pan juices over the bird.
  10. Remove contents of cavity and discard.
  11. Allow to stand for 15 minutes before carving.

Serves 6

The lavender and cardamom, give this recipe a bit of a Sephardic feel. I can almost see it as a refreshing variation of Moroccan Chicken Tadjine. I’ll have to make it tonight, I can just imagine what the aroma will be throughout the house. I could even pair it with a Duvel beer or a Blue Moon Belgian Ale. Either one will nicely complement the citrus taste…MmmMMmmmmMMmm!

I was looking for a Peking Duck recipe


Whenever I pass by a Chinese restaurant, my gaze invariably turns to those very shiny, brown colored, ducks that often are displayed so as to be seen from the outside. They look delectable but, alas, they are not kosher… I finally found what promises to be perfect directions for a delicious kosher Peking Duck on the Chef Kosher website.

Here is their recipe:

Peking Duck

Ingredients

  • 1 (4 pound) whole duck, dressed
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground white pepper
  • 1/8 teaspoon ground cloves
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 orange, sliced in rounds
  • 1 tablespoon chopped fresh parsley, for garnish
  • 5 green onions
  • 1/2 cup plum jam
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons distilled white vinegar
  • 1/4 cup finely chopped chutney

Directions

1. Rinse the duck inside and out, and pat dry. Cut off tail and discard.

2. Mix together the cinnamon, ginger, nutmeg, white pepper and cloves. Sprinkle one teaspoon of the mixture into the duck. Stir one tablespoon of the soy sauce into the remaining spice mixture and rub over the entire outside of the duck. Cut one of the green onions in half and place inside duck. Cover and refrigerate for at least 2 hours.

3. Place duck breast side up on a rack in a big enough wok or pot and steam for an hour adding a little more water, if necessary, as it evaporates. Lift duck with two large spoons, and drain juices and green onion.

4. Mix the remaining 2 tablespoons of soy sauce and honey.

5. Preheat the oven to 375F. Place duck breast side up in a roasting pan and prick skin all over with a fork. Roast for 30 minutes.

6. Brush the honey mixture onto the duck and return it to the oven. Turn the heat up to 500F. Roast until skin is richly browned.

7. Prepare duck sauce by mixing plum jam with the sugar, vinegar and chutney in a small serving bowl. Chop remaining green onions and place them into a separate bowl. Place whole duck onto a serving platter and garnish with orange slices and fresh parsley. Use plum sauce and onions for dipping.

The more I reread the above recipe, the better it tastes in my mind… I think if I start preparing it now I could still enjoy for Shabbat, tonight. Hmnnn, that might make this Shabbat Rosh Chodesh, especially memorable!
